Runs fine with small loads but when trying the air conditioner it shuts down on battery over voltage. It's connected to 3 100amp 48 volt eco worthy rack batteries. I have them charged to 100% but some cell show red so not all balanced.

The batteries are very capable, but the inverter is seeing the massive inrush current that happens when an air conditioner turns on. That current can be 3-5 times the run current. You did not say the size of the A/C, but that is what is happening.
